Okay. I'm looking for a detachable patrol pack on a modular platform that will not look oversize but will give me reasonably good storage. Say for a 3l Camelbak and a 2 boxes of 400 link 7.62.
I have a Blackhawk titan and want something I can attach (so as to use the Blackhawk as my main pack) and I can quickly drop of the extension and patrol.
I think that makes sense?
all the same I was thinking a PIG operators pack?
thoughts, suggestions?

How do you plan on attaching it? Like the assault pack on the USGI MOLLE ruck? G-hooks?, MALICE / MOLLE Stix, etc?
The PIG gRUNT small will hold exactly what you are talking about - it will fit a Bladder and a PRC117G - roughly the same size as 2x400 Boxes of 7.62. The Large has even more room.

I was thinking something fairly quick release, I'm not too clued in with the various molle attachment methods. Any advice?

I have yet to try the MOLLE Stix, but they have great reviews. They have a break away feature, and route through Molle quicker and easier than MALICE Clips.
The Blackhawk! Titan pack has Molle covering the front for this application. However having that much weight, that far out from your back is going to suck in the long run. I always pack my heavy Items as close to my back as possible. On the other hand, 800 rounds of 762 link is something those 240's are going to need in a hurry. being a gunnner, AG, or Ammo bearer is a back breaking job no matter what.
